Ask when the condition is and whether it's real. Had + past participle rewrites the past: Had she saved the file, she wouldn't have lost it. Were imagines an unreal present or unlikely future, with would in the result. Should covers a real future possibility, so an instruction can follow: Should the alarm sound, use the stairs.
